A Healthy (and Delicious!) Fall Snack

At this time of year, we are surrounded by recipes involving ingredients like pumpkin, apples, grapes, and maple syrup. In this post, I'm going to share with you a great fall recipe that uses a few of my favorite nutritious things from my home in Upstate NY in the fall.
I like to add pumpkin to my recipes because it's high in fiber and beta carotene, but also because it makes this time of year feel festive (and takes the focus off the changing weather!). Greek yogurt is a great creamy treat, and can be used in savory dips or sweetened as a treat! The yogurt contains probiotics that support a healthy digestive tract. Additionally, the use of real maple syrup adds many great minerals and micronutrients to this snack!



Pumpkin Pie Flavored Greek Yogurt
1/2 cup greek yogurt
1/8 cup pureed pumpkin
1Tbsp real maple syrup
dash of cinnamon
dash of ginger
dash of nutmeg

Instructions:
Stir all ingredients until smooth. Serve with topping of choice (in the pic I used chopped pecans)
This makes one serving.

Variation: On a warm fall day, put this mixture in an ice cream maker, or pour into ice cube trays and freeze. When frozen, transfer to a blender to make frozen yogurt!

Its seems like very healthy breakfast snack. Greek yogurt is such an awesome food. It must be very nutritious diet food.
